I was just wondering, what do most people set "Max allowed sessions per guest IP" to... right now, I have it set to the default "8" but do I want to drop that down?

This just means how many times a person can be on your site at one time.
Say I went to your site, I would get a session id (yoursite.com/whatever&sid=2892733847893274)
Now say I opened another tab or browser or clicked a link which generated another page, I would get a different sid. This makes it to where guests can only have a maximum of 8 at one time.
What this is used for is to help stop being ddos attacked. When you get "dossed" it's just like hundreds or god forbid thousands of "bots" (other poor infected people's pcs) are visiting your site. The bots would grab and view something (a picture or a download whatever) so fast and in such a large number that it sky-rocket's your bandwidth causing your site to be unresponsive because it has to handle so much activity and floods the server causing the denial of service.
Anyways each of those "bots" would have a different sid so keeping this at a minimum is encouraged. Although you could probably be safe at 15-30 but no user needs that many.
