how can I change the Board Founder's name?

As to my knowledge u cant. But u can change the colour of admins to match the colour of board founder if u have more than one.

Try admin > General Admin > Configuration
> Allow Username changes Yes No

change it to yes and go to the founder account and give it a try.
I'm not sure it will work on founder. make sure you put the setting back
when your done testing as it can cause much confusion for your users.

If you just want to change the username, the easiest is to do it via phpmyadmin; just change the username for the user_id = 2 (board_founder).

If you want to give the rank of board founder to someone else, and thus have 2 board founders, you have check the two following messages and follow the easy edits :

If you want to downgrade the board founder to admin or normal user, and then promote another user to the rank of board founder, the easiest would probably be to do it via phpmyadmin again:

Don't forget when adding founders, your granting admin. You need to update your security settings if you have it on to monitor admins and mods.

I don't know how many times I have forgot and get that email, "How come I was banned'.
